Dry Dock Brewers

Meet our brewers:

Doug Hyndman
Doug started his brewing career as a homebrewer in 2002, and decided to work in the industry shortly after he graduated from Clemson University in 2004.  He attended the American Brewers Guild, and started at Ska Brewing in Durango as a Powder Monkey in 2005, moving to a full time brewer at San Diego’s Green Flash Brewery in 2007. He discovered his passion for hoppy beers there. In 2009 he decided that high gas prices and lack of pow pow were too much, so he moved back to Colorado and worked at Rock Bottom in downtown Denver. In fall of 2010, he jumped ship to Dry Dock Brewing. In January 2012 Doug accepted the position as head brewer for Dry Dock Brewing, we feel his strong technical expertise and organization will help us succeed in 2012 and beyond.  And, he successfully showed us that we can brew 14 times in 5 days to get all the taps full! In his free time he enjoys Snowboarding, watching or playing football, and most importantly drinking beer and being an Apple fan boy.

Lachlan McLean
Both of Lachlan’s older brothers brewed in the late 80′s; then in 1997, his brother Steve got him a homebrew kit for Christmas.  He immediately fell in love with brewing and brewed everything he could think of.  He went to school for Medical Laboratory Science and realized that everything he learned in school directly related to brewing, whether it be water or yeast management, or the balance of ingredients being integrated. In March of 2008, he convinced Kevin to let him work at Dry Dock as a Boatswain (assistant brewer).  Mind you, he still slaves away at his day job as a Medical Lab Scientist. Since then he has received a promotion to admiral, which is the ever-so-worthy job of cleaning up, mostly after Bill and Kevin. Fun note about Lachlan: when Dry Dock won their first award at the Great American Beer Festival, his brother Steve was there and able to see just what his Christmas gift had turned into. In his free time, he enjoys dog sledding in the winter when there’s enough snow, playing the banjo and mandolin, as well as flying model airplanes. He also participates in the Varsity Nap Team, after enjoying a couple of his delicious Belgian Quads.

Walt Chleva
Walt’s good friend Adam got him started in 2002 as a homebrewer and took him to Dry Dock within the first few weeks of opening. He fell in love with craft beer there, and became inspired to start crafting “every beer under the sun”. While on active duty in the Marines, he brewed more and more, eventually getting shanghaied for the dirty slave work of the home brew store. He would occasionally serve as grain-out boy for all of Bill’s brewing adventures, finally escaping the grasps of Steve and The Brew Hut. After some time, Walt’s graining-out skills (and begging) were impressive enough to catch Kevin’s eye, and his request to jump ship from the Hut was granted. This improvement from slave to Quarter Master at Dry Dock was made in summer 2010. In early 2011, Walt will begin the program at the American Brewer’s Guild, following the other brewers footsteps.  In his spare time, he enjoys going to car shows in his 89 Turbo Trans Am, and using his smoker to concoct tasty charred mammal flesh.

Ashleigh Carter
Ashleigh is an Aurora, Colorado native. She graduated with a degree in pure mathematics and played Division I soccer at the University of North Carolina Asheville in 2007. After college, she continued to coach college soccer. In 2010, she decided that she needed a change in career and moved back to the best state ever! After her first batch of home brew (which was all grain), she decided she wanted to brew professionally. She got her way into The Brew Hut by drinking and hanging out there every Monday afternoon. It wasn’t long before she squirreled her way into the brewery with a couple of grain-outs and volunteering every waking moment she had. Eventually Bill and Kevin gave in and let her be an assistant brewer. In her spare time (the little that she has away from the brewery and The Brew Hut), she plays soccer, snowboards, and hangs out with her dog.

Brett Williams
Brett got his first taste of real beer when his uncle slipped him a Harpoon IPA at a family gathering as a teenager. He got started brewing professionally when his friend and bandmate, the legendary Chet Sterling, hired him as a bottler and brewery helper at Richmond’s Richbrau Brewing Company. Chet urged him to homebrew as a method of learning the ancient secrets of his newly-beloved craft. Brett then got married, but his wife lived in Texas. He transferred to the University of Texas at Dallas for his final year of school and worked at a homebrew store in the area. During this time, he studied brewing extensively and was mentored by famous homebrewer, J Killet Harris. After graduating, Brett and his wife moved to Denver where he began working at Rock Bottom in downtown Denver. From there, he went to the infamous Bull and Bush Brewery. Brett jumped ship to Dry Dock in the summer of 2011. In his free time, he enjoys camping, snowboarding, playing guitar and cooking. His favorite everyday beers are American Pales and IPA’s. He also loves beers with rare ingredients and often gets a wild hair in the brewhouse.
